Fall on Me – 101

NOTE: No, he did not put the empty container back in the fridge in real life!!  He put it next to the sink. =P

I feel like sharing the rice pudding recipe I use:

3 cups of milk

1 1/2 cups of rice

1 can of condensed milk (300 mL)

1 or 2 cinnamon sticks

1 teaspoon of vanilla extract

Ground cinnamon to taste

Put milk and cinnamon stick(s) in a pot over medium temperature; add the rice and stir with a wooden spoon until it starts to boil.  Let it boil for a few minutes (2-3), then lower the heat to a simmer and stir occasionally until it starts to thicken (not too thick!).  Add the condensed milk and the vanilla (make sure that the rice is soft enough first; if not, let it boil a bit longer…you may need to add more milk) .  Let it sit for a while, stirring occasionally so it won’t stick to the bottom, until it reaches desired thickness.  Don’t let it dry too much!

    About the recipe: just how much is a ‘can’ of condensed milk over there?
    I’ve seen them in different sizes pretty much everywhere I’ve been. :)

      The cans I use are 300 mLs, but I’m sure a bigger can can’t hurt; depending on how sweet you want it…

    Yum. We make it with coconut milk & crushed pineapple for Pina Colada Rice Pudding!

      Ooo that sounds good; I’ve never tried it!

        I’ve done the same thing with ice cream. Unlike regular milk, coconut milk won’t curdle because of the acidic pineapple juice. Either tastes even better when you make the adult version – with alcohol. On that note, an Irish Cream & Kahlua parfait also makes for a fast and yummy desert, and can be had for a quick stop at a liquor store and a swing through the McDonald’s drive-through. :D
